  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into thin medallions, arranging them in a baking dish.
  3. In a medium saucepan, melt the butter with brown sugar, water, cinnamon, cloves, nutmeg, and salt over medium heat.
  4. Use a pastry brush to coat about three-quarters of the sauce onto the sweet potato medallions and cover with foil.
  5. Bake for 45–50 minutes until tender.
  6. Remove the foil, drizzle remaining sauce on top, and sprinkle with pecans and mini vegan marshmallows.
  7. Broil for 1–2 minutes until marshmallows are toasted; watch closely to prevent burning.
  8. Allow to cool for 10–15 minutes before serving.
