  • 1 lb lean ground beef
  • 1 small red bell pepper
  • 1 medium zucchini
  • 6 green onions
  • 2 cups red enchilada sauce
  • 1 can black beans
  • 8 corn tortillas
  • 1½ cups shredded Mexican blend cheese

Instructions

  1. Preheat the oven to 425°F. Heat a large oven-safe skillet over medium-high heat, spray with cooking spray, and add olive oil.
  2. Add the ground beef along with diced bell pepper, zucchini, and white parts of the green onions. Cook until meat is browned and zucchini is tender (about 8 minutes).
  3. Stir in chili powder, garlic powder, oregano, enchilada sauce, rinsed black beans, corn, and half of the cheese until well mixed.
  4. Fold in tortilla wedges until coated with sauce.
  5. Top with remaining cheese and bake for 10-15 minutes until bubbly.
  6. Garnish with green onion tops, cilantro, tomatoes, and avocado before serving.
