  • 4 large apples (2 Honeycrisp and 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in water)
  • 5 tbsp butter (for streusel topping, partially melted)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (for streusel topping)
  • 1/2 teaspoon ground cinnamon (for streusel topping)
  • 1/4 cup melted butter (for icing)
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 400°F. Grease muffin tin with butter.
  2. Prepare apple filling by peeling and slicing apples, then mix with brown sugar, cinnamon, lemon juice, melted butter, and cornstarch. Heat until thickened.
  3. Press each cinnamon roll into muffin cups and fill with apple mixture.
  4. Combine streusel ingredients until crumbly and top each roll generously. Bake for about 15 minutes, covering loosely with foil initially to avoid over-browning.
  5. While baking, whisk together icing ingredients until smooth. Drizzle over warm rolls once baked.
