Ingredients

Scale
  • 2 cups apple cider
  • ½ cup butter (room temperature)
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. In a saucepan over medium heat, bring the apple cider to a boil. Reduce to a simmer, cooking until reduced by half (about 20-30 minutes). Remove from heat and let cool.
  2. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan.
  3. In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla until well combined.
  5. Add the dry ingredients—flour, apple pie spice, baking powder, baking soda, and salt—along with the cooled reduced apple cider. Mix until just combined.
  6. Pour the batter into the prepared loaf pan and bake for approximately 50 minutes or until a tester comes out clean.
  7. Allow the bread to cool in the pan for 15 minutes before transferring it to a cooling rack.
